Shawarma remains the most popular street food in Novosibirsk, with MGrill leading the market with 56 locations. The city’s street food scene is dynamic, featuring both established chains and emerging players offering a variety of options.
Hot dogs are the second most popular option, with “Hot Dog Master” being the only specialized chain. While Gazpromneft gas stations also offer hot dogs, they are less accessible to pedestrians.
The sandwich market is led by “Podorozhnik,” although the chain has declined in recent years. Sandwiches are also available in larger fast-food chains and retail stores.
Pan-Asian cuisine, including rolls and noodles, has become a common street food option. Sushi Vostok is the largest chain, but Sushi Make and Sushi Day’s have a strong presence in the city center and shopping malls.
“Russian Pancakes” dominates the pancake market with 52 locations. The chain is expanding into food courts and other locations.
Belyashi and chebureki are less prominent but still present, with “Belyash” and “Hot Belyashiki” being key players. “Cheburek.Mi,” a Novosibirsk-based project, has expanded to multiple countries but has a limited presence in its hometown.
Most street food businesses are operated by individual entrepreneurs through franchising. MGrill, for example, began franchising a decade ago and is now primarily managed by individual entrepreneurs.
Food trucks are also becoming increasingly popular in the city. Street food provides an attractive alternative to restaurants and cafes due to declining consumer demand.
