Coffee Brut Chain Opens First Franchise Location in Novosibirsk

A new “Coffee Brut” cafe has opened in Novosibirsk on Vokzalnaya Magistral, marking the return of the brand to its city of origin under a Tyumen franchise. The cafe occupies the space formerly held by the Garden Room cafe.

The “Coffee Brut” chain, originally created in Novosibirsk by the owners of the “Shashlikoff” group in 2020, was acquired by entrepreneurs from Tyumen last year. While the first Novosibirsk location on Stanislavsky Square remains under the original ownership, a second location on Sovetskaya closed in 2023.

The Tyumen-based company, which acquired the trademark in 2024, has successfully expanded the chain, with four cafes currently operating in Tyumen and plans for further expansion into Yekaterinburg and Surgut. The Novosibirsk franchise is managed by LLC “Pik-Rest,” headed by Alexander Kotov, who also has interests in a car wash business.

The new Novosibirsk “Coffee Brut” offers a varied menu, including quesadillas, pancakes, schnitzel, and tom yum soup, with prices for hot dishes starting at 399 rubles and reaching 779 rubles for the salmon steak. Wine is available by the glass from 299 rubles, pending alcohol trading license approval.

This opening signifies the continued expansion of restaurant chains from other regions into the Novosibirsk market.
