Shawarma continues to be a dominant force in Novosibirsk’s street food landscape, surpassing other options like pancakes and hot dogs in popularity. However, the challenge lies in identifying quality offerings amidst the numerous mass-produced options.
Shawarma, originating as a variation of the Turkish doner kebab, evolved in Berlin in the 1950s to cater to busy individuals seeking convenient meals. The modern version involves wrapping meat, vegetables, and sauce in flatbread. While classic doner kebabs were served open-faced, the mass-market version typically features a closed wrap in thin lavash, often grilled for crispiness.
“Shawarma on Coals” is a well-known establishment praised for its crispy lavash and fresh ingredients. The chicken is cooked over an open fire, the sauce is flavorful, and the vegetables are crisp. Another location near the Kalininsky department store is also popular. “On Coals from Sam” offers a wider variety of meat options, including chicken, pork, and lyulya kebab, along with kebabs, ribs, and wings.
Some establishments are experimenting with new variations on the classic shawarma. Chilz Grill offers both shaverma (in a tortilla) and shawarma (in lavash), using chicken thigh, Peking cabbage, and tartar sauce. Jungle Chef features an extensive menu with 12 types of shawarma, including options with tom yum sauce, steak, cherries, blue cheese, and even chocolate-banana.
For a more upscale experience, Dener Istanbul serves traditional Turkish doner kebab with beef, available in lavash, a bun, or on a plate. Kebab Hub, originating in Moscow, offers dürüm with quickly fried sliced meat and red cabbage. Vino i Greki at the Gastrocourt prepares gyros, another variation of meat cooked on a vertical grill, served in pita bread.
The popularity of shawarma can be attributed to its affordability and filling nature, making it a preferred option for those seeking budget-friendly meals. This trend has prompted restaurants to offer simpler, more accessible options to customers.
