Restaurant Aure, led by Emma Nørbygaard and chef Nicky Arentsen, has achieved remarkable success by earning a Michelin star and a seven-figure profit within a short period of opening. This accomplishment is particularly noteworthy in the fine dining industry, where profitability is often a challenge for new Michelin-starred establishments.

Emma Nørbygaard, co-owner and General Manager, is credited with the restaurant’s financial success. Her responsibilities encompass all aspects of the business outside the kitchen, including financial management, hiring, personnel management, and strategic planning.

The duo’s journey began at Bandholm Badehotel on Lolland. In January 2024, they acquired the Krudtløbsvej 8 property and opened Restaurant Aure with Pandora founder Michael Lund Petersen as an investor.
